Spicy Pineapple and Coconut Rum Cocktail

Summer time for me offers a freedom in slowing down, taking the time to dabble a bit in mixology, and enjoy some new and refreshing creations. This spicy pineapple and coconut rum cocktail is a concoction of my own after experimenting with some of my favorite things I’d like in a cocktail. This cocktail makes for a good party cocktail if your friends and family are into spicy drinks. It is moreso recently that I have truly come to love spicy drinks.

Spicy Pineapple and Coconut Rum Cocktail

Ingredients

  • 2/3 cup pineapple juice
  • 2/3 cup coconut rum
  • 3 Tbsp lime juice
  • honey for rimming
  • salt rimmer
  • Tajin to add to salt rimmer
  • thin slices of jalapeño for the drink and garnish
  • edible orchid for garnish

Instructions

  1. Add pineapple juice, coconut rum, and lime juice to a small pitcher. Stir and chill.
  2. Rim two glasses with honey and water mixture first then the salt with Tajin mix.
  3. Fill the two glasses with ice cubes. Pour half the pitcher mixture into each glass and mix in up to three thinly sliced jalapeño slices.
  4. Garnish with thin jalapeño slices, a slice of lime, and a pineapple leaf.
