Summer time for me offers a freedom in slowing down, taking the time to dabble a bit in mixology, and enjoy some new and refreshing creations. This spicy pineapple and coconut rum cocktail is a concoction of my own after experimenting with some of my favorite things I’d like in a cocktail. This cocktail makes for a good party cocktail if your friends and family are into spicy drinks. It is moreso recently that I have truly come to love spicy drinks.
Spicy Pineapple and Coconut Rum Cocktail
Ingredients
- 2/3 cup pineapple juice
- 2/3 cup coconut rum
- 3 Tbsp lime juice
- honey for rimming
- salt rimmer
- Tajin to add to salt rimmer
- thin slices of jalapeño for the drink and garnish
- edible orchid for garnish
Instructions
- Add pineapple juice, coconut rum, and lime juice to a small pitcher. Stir and chill.
- Rim two glasses with honey and water mixture first then the salt with Tajin mix.
- Fill the two glasses with ice cubes. Pour half the pitcher mixture into each glass and mix in up to three thinly sliced jalapeño slices.
- Garnish with thin jalapeño slices, a slice of lime, and a pineapple leaf.
