My family and I had the pleasure of finally making our trip to New York City post pandemic shut down two weeks ago. One of the restaurants just opened last year. Peak in Hudson Yards is officially my number one favorite restaurant in New York City. It is located in the building’s 101st floor and boasts views to die for. If you’re fearful of heights, as I am, you’ll find the courage to make it here. We opened up our evening with a cocktail unlike anything we have ever tried before, The Bees Knees Cocktail. It is an unsuspectingly earthy and delicious cocktail featuring pomegranate and beet juice.
Bees Knees Cocktail
Ingredients
2 shots of Gin, I used The Botanist
2 oz. pomegranate juice
1 oz. beet juice
Juice from 1 lemon
1 Tbsp. honey
1 piece of raw honeycomb
1 spring of breath for garnish
Prepare
- First, fill a cocktail shaker halfway with ice.
- Next, pour in the pomegranate, beet juice, honey, and freshly squeezed lemon juice into the cocktail shaker.
- Shake, shake, shake.
- Then fill a cocktail glass halfway with ice and pour the contents of the cocktail shaker over the ice.
- Finally, top with the honeycomb and baby’s breath and enjoy!
