I’ve always been a typical fruity drink kind of girl. I love fruits and their flavors in general so why not serve it up in a drink? Mango Mai Tai cocktails have always been on the top of my list. Being that mangoes are now in season, it’s a perfect way to use those mangos in your yard, or from your neighbor’s yard. Haha! Invoking the flavors and vibes of summer time, it is the perfect refreshing drink to cool off by the pool. Don’t forget to add a cocktail umbrella, a smile, and share…if you’d like!

Mango Mai Tai

Ingredients

4 cups ripe mango chunks

1/4 cup sugar

1 cup dark rum (Santa Teresa)

1 cup pineapple juice

1/2 cup simple syrup

4 tablespoon Grenadine

4 Fresh Pineapple wedges

4 Maraschino Cherries (optional)

Prepare

  1. First, in a blender, combine the mango, sugar, and blend until smooth and no chunks of mango remain.
  2. Then add the rum, pineapple juice, and simple syrup and blend until thoroughly combined.
  3. Next, pour the contents of the blender into 8 ice-filled glasses and top each drink with 1 tablespoon of Grenadine.
  4. Finally, garnish each Mango Mai Tai with pineapple wedges and a cocktail umbrella if desired.
