Chicken Souvlaki and Tzatziki Sauce

I think the most positive thing to come of our recent life-changing event of being home on quarantine is that for my family, nothing has really changed. We eat out once a month as a family and have a list of restaurants on rotation. Cooking at home is a priority for most all dinners. I’m really grateful for that and that we don’t miss being “out.” One of our favorite foods to enjoy when we do go out, especially to our local annual Greek Festival is souvlaki. This chicken souvlaki and tzatziki sauce takes us right back. Pair it with some spanakopita for an appetizer and baklava for dessert! Enjoy this easy and fresh meal that you and your whole family will surely enjoy!

Chicken Souvlaki

Ingredients

  • 2 pounds chicken breasts
  • 3 tbs olive oil
  • 1.5 tbsp dried oregano
  • 1 tbsp dry dill weed
  • 1 tsp salt
  • 1/2 tsp fresh cracked black pepper
  • 6 cloves garlic
  • 2 lemons
  • 2 oranges
  • pita bread
  • lemons for spritzing
  • 1/2 cucumber
  • 1 tomato
  • 1/2 julienned red onion

Prepare

  1. Cube the chicken into rough 1 – 2 inch cubes.
  2. Place into gallon-sized bag along with olive oil, squeezed lemons, oranges, oregano, dill weed, salt, pepper, and garlic. Squeeze excess air out of the bag, mash around so that all ingredients are fully incorporated, and allow to marinate in the refrigerator for 24 hours.
  3. The next day, preheat the oven to 400 degrees Fahrenheit
  4. Line a baking sheet with aluminum foil, oil it with olive oil, and take the marinated chicken cubes out and skew them on to metal skewers. Place each skewer onto the baking sheet until you’ve used up all of the chicken.
  5. Bake the skewers for 30 minutes or until you start getting some browned bits/parts on the chicken.
  6. Serve with tzatziki sauce (see next), lemons, lettuce, sliced cucumber, tomatoes, red onions, and pita bread. Assemble them to your taste, salt and pepper, and enjoy!

Tzatziki Sauce

Ingredients

  • 2 cups Greek Yogurt
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 4 tbsp fresh dill weed
  • 1/2 cucumber
  • 1 lemon
  • 6 cloves garlic
  • 1 tbsp salt
  • 1/4 tsp freshly cracked black pepper

Prepare

  1. Remove stems from dill weed and grate cucumber using box grater on the side with the large holes.
  2. Place all items in a food processor or blender and process/blend until smooth.
  3. Place in a bowl and serve alongside souvlaki and feel free to enjoy with celery sticks and carrots the same week. The tzatziki sauce will become more flavorful in the days after making it.
