Cuban Black Beans

Cuban black beans, here’s an easy peasy dinner you can make on a busy night without breaking the schedule nor the bank. Being of Cuban descent myself I do appreciate a good Cuban meal. My mother makes the most insanely delicious and authentic Cuban food. Growing up it was always a wonder seeing her labor with love over each meal she made us.

As you can see in the picture above, we paired these Cuban black beans with picadillo, tostones, and rice. Without question, this is the perfect Cuban meal. This recipe is as easy as it gets! Enjoy amigos and amigas!

Cuban Black Beans

Ingredients

1 yellow onion, diced
3 tablespoons olive oil
2 teaspoons dried oregano

1.5 tbsp onion powder

1 tbsp garlic powder

1 teaspoon ground cumin
8 cloves garlic, minced

1 cup green pepper, diced
16 oz dried black beans
1 tablespoon chicken bouillon

2 tbsp vinegar

1/2 cup white cooking wine

1.5 cups water
1 bay leaf
1 – 15 oz. can tomato sauce
Kosher salt and freshly ground black pepper

Prepare

1. First, cook onions in the olive oil in a large pressure cooker pot over medium heat until soft, about five minutes. 

2. Next, add the garlic and cook for one minute. Stir in the green pepper and tomatoes and cook for five minutes.

3. Sprinkle in the oregano, cumin, and garlic, and onion powders and cook until fragrant. 

3. Pour in the vinegar and wine and cook for another five minutes, until bubbling.

4. Then, add the black beans, tomato sauce, bouillon, bay leaf and the water.

5. Simmer for at least 30 minutes uncovered and then cook for an additional hour in the pressure cooker.
