It is summer, full force, especially with these chicken and peach asian sauce marinated skewers, despite the fact that I am due to stay working until June 18. Covid has thwarted a lot of plans, one being when summer ends for our school district. It’s all good though. I switch to summer mode sometime around the end of April, Covid or no Covid. This means grilling and a lot of of it. It was at the center of growing up in summer time. My dad would always fire up the grill and make something that would emit a near magic spell to your nose and stomach. Enjoy these chicken and peach Asian sauce marinated skewers I have concocted that is sure to be a party hit for any of your upcoming summer potlucks/parties.
Ingredients
Marinade
- 1/4 cup mirin
- 1/3 cup soy sauce
- 1 tbsp dry cilantro
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 2 tbsp honey
- 1 tbsp freshly grated ginger
Skewers
- 4 chicken cutlets, cubed
- 2 yellow bell peppers, cubed
- 3 peaches, cut into wedges
- 2 medium red onions, cut into wedges
Prepare
- First, make marinade with all of the first seven ingredients, soak chicken in marinade for an hour or more.
- Next, reheat a BBQ or grill pan to medium high heat. Alternating between the onion, pepper, peaches and marinated chicken, thread the ingredients onto skewers.
- Then lace the skewers onto the grill and brush any of the excess marinade overtop. Grill for approximately 12-15 minutes until the chicken is cooked through and the vegges are slightly charred.
- Finally, serve on its own or with a bowl of rice.
