WHITE CHOCOLATE CHIP LEMON COOKIES

Cookies in all forms are something reveled over in my household, which primarily consists of boys. As quickly as I whip up two dozen cookies, they’re gone in a flash. I’m lucky if I get to eat two, if at that! It’s difficult for any of my boys, daddy included, to turn down any flavor of cookie that I make. I’ve been meaning to experiment with a batch of cookies to make them more summery with a strong lemony flavor and I would have to say this is the epitome of lemony goodness! Make these white chocolate chip lemon cookies for your family, or for yourself even if you are still in the interim.

White Chocolate Chip Lemon Cookies

Ingredients
1 3/4 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cornstarch
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup packed light-brown sugar
1 1/2 Tbsp lemon zest (from about 3 medium lemons)
1 large egg
1 tsp lemon extract
1/4 tsp vanilla extract
1 cup white chocolate chips

Prepare
1. Preheat oven to 350 degrees Fahrenheit.
2. In a stand mixer whisk together flour, baking soda, salt, and cornstarch for 30 seconds and set aside.
3. Also, in a stand mixer with paddle attachment, cream butter and granulated sugar, brown sugar, and lemon zest for two minutes.
4. Mix in egg, lemon extract, and vanilla extract and beat for one more minute.
5. Add white chocolate chips and mix only until well incorporated.
6. Form the dough into 1-inch balls and place onto a parchment paper lined baking sheet and space 2 inches apart from each cookie.
7. Bake for 11 minutes, remove from oven, and cool on wire racks.
8. Store in an air-tight container…if it even lasts that long…seriously they’re so good you’ll want to eat them all.
